Sencha is Japan’s most popular green tea, representing around 80 percent of the Japanese green tea cultivation. In contrast to many types of Chinese green tea, which is usually pan-fired, Sencha is gently steamed. This means the leaves keep their emerald colour, and most importantly, retain their essential nutrients. Then a special procedure is used to roll the leaves into a needle-like shape. The rolling is an important step, as it breaks the cell walls of the the leaves and releases precious nutrients and flavour.

Unlike the Japanese teas Gyokruo and Tencha, Sencha is not shaded from sunlight. This is why the plants develop and store a substantial amount of concentrated nutrients; especially catechins, vitamins, minerals and trace elements. Being sun-drenched also gives this tea its characteristic, slightly sweet taste. Sencha is one of the highest quality teas, and the best for enjoying all of the health promoting benefits of green tea.

Like all green teas, Sencha should be brewed at around 60 degrees to 70 degrees to fully enjoy its taste and properties. Avoid steeping green tea at higher temperatures, as most nutrients will be destroyed and the infusion will become bitter tasting. Two to three teaspoons per litre leads to the optimal taste. Steep tea for around two minutes, unless you prefer a milder taste.
